Crockpot Pork Roast, With Some Mexican Flavor

Made a crockpot meal this morning! I totally made it up with random food I had in the fridge so we’ll see how it turns out! =) I used a pork roast, carrots, green bell peppers, salt and pepper. I gave it a little Mexican flare by adding fresh cilantro, ground coriander, cumin, chili powder, oregano, and red pepper flakes for some extra spice. I’ll let you all know how it turns out!  Feel free to share some of your favorite crockpot recipes too!

So why no garlic and onions??? I am currently on a SIBO protocol. SIBO stands for Small Intestine Bacterial Overgrowth (I know, sounds kinda gross…). This protocol restricts foods that ferment in our gut, which in turn, feed the bacteria. Unfortunately garlic and onions are on this list…=( But, it’s temporary for the time being, AND there are plenty of alternatives to use instead, just like I did in this recipe!
