Blueberry Pancakes for Easter!!!

Happy Easter everyone! Enjoy time with family and friends today! If you're feeling like something sweet for breakfast, try out my almond flour pancakes! They are a favorite in my house! We top ours with blueberry coconut cream plus additional blueberries of course! To make the blueberry coconut cream, we just blend blueberries (typically frozen ones since we have them year round in our house) and coconut milk or coconut cream. Cauliflower Banana “Oats”

I made cauliflower "oats" for breakfast! This was my first time making these so I just threw some things together and they turned out! I'll tell you what I did, but to be honest, I didn't measure anything! Here goes: First I sautéed cauliflower rice in @organicvalley pasture-raised butter, added sliced bananas to sauté with the cauliflower, and then seasoned with @simplyorganicfoods vanilla, @traderjoes pumpkin spice, addition cinnamon, a little sea salt and a dash of stevia (I think maple syrup would be delicious too ). Once the "oats" were tender and most of the moisture was cooked off, I topped them with banana slices, almond butter and coconut milk! Deeeeeelicious! Crockpot Tomatillo Salsa

This weekend we made tomatillo salsa in the crockpot to go with our avocado and ground beef tostadas! We made homemade almond flour tortillas too! Lots and lots of green foods in this meal! Next time we'll get more color in there! We almost always #eattherainbow, but we got a little carried away with all the greens this time! =) That's ok though! At least we are still getting some phytonutrients, like chlorophyll, from these delicious green colored foods! =)...

Easy Breakfast Hash

Easy Breakfast Hash (minus potatoes). Very simple to whip up and tasty too! Includes good veggies, protein and healthy fats! Serves 2 people -4 Eggs cooked however you like. (I like over medium so the yolks are still a little runny) -1/2 cup spaghetti squash (I used leftover spaghetti squash. I like using it in this recipe because it's a great substitute for potatoes. ) -1 zucchini, chopped -1/2 green bell pepper, chopped -5 pieces precooked bacon, chopped -1 tomato, chopped -salt and pepper to taste Sauté veggies in garlic oil (everything but tomato) over low to medium heat. Crockpot Chicken Curry Stew

I had no idea what I was going to make for dinner tonight. I threw together a crockpot meal on a whim and it turned out really good! I used carrots, bell peppers, broccoli florets plus the stem, butternut squash chicken, curry powder, a can of coconut milk, lime zest, cilantro, salt, pepper, a whole dried cayenne pepper, garlic oil, and ginger.
