Easy Breakfast Hash

Easy Breakfast Hash (minus potatoes). Very simple to whip up and tasty too! Includes good veggies, protein and healthy fats!

Serves 2 people
-4 Eggs cooked however you like. (I like over medium so the yolks are still a little runny)
-1/2 cup spaghetti squash (I used leftover spaghetti squash. I like using it in this recipe because it’s a great substitute for potatoes. )
-1 zucchini, chopped
-1/2 green bell pepper, chopped
-5 pieces precooked bacon, chopped
-1 tomato, chopped
-salt and pepper to taste

Sauté veggies in garlic oil (everything but tomato) over low to medium heat. Season with salt/pepper to taste. Add the bacon to the veggie mixture and cook until heated. Add the chopped tomatoes and cook just until they start to get soft. Season with additional salt/pepper to taste. Top with the cooked eggs and dig in! ?
