Crockpot Tomatillo Salsa

This weekend we made tomatillo salsa in the crockpot to go with our avocado and ground beef tostadas! We made homemade almond flour tortillas too! Lots and lots of green foods in this meal! Next time we'll get more color in there! We almost always #eattherainbow, but we got a little carried away with all the greens this time! =) That's ok though! At least we are still getting some phytonutrients, like chlorophyll, from these delicious green colored foods! =)...

Easy Breakfast Hash

Easy Breakfast Hash (minus potatoes). Very simple to whip up and tasty too! Includes good veggies, protein and healthy fats! Serves 2 people -4 Eggs cooked however you like. (I like over medium so the yolks are still a little runny) -1/2 cup spaghetti squash (I used leftover spaghetti squash. Season with salt/pepper to taste. Add the bacon to the veggie mixture and cook until heated. Add the chopped tomatoes and cook just until they start to get soft. Crockpot Chicken Curry Stew

I had no idea what I was going to make for dinner tonight. I threw together a crockpot meal on a whim and it turned out really good! I used carrots, bell peppers, broccoli florets plus the stem, butternut squash chicken, curry powder, a can of coconut milk, lime zest, cilantro, salt, pepper, a whole dried cayenne pepper, garlic oil, and ginger. It turned into a really tasty coconut curry chicken stew. I topped it with fresh cilantro and chives! Delicious! If you're interested in trying it yourself, here's the recipe! Enjoy!   2 chicken breasts ½ tsp sea salt ¼ tsp pepper ½ tsp ground coriander ¼ tsp ground ginger (I used dried Chinese ginger) 2 tsp curry powder 1 Tbs Coconut...

Basic Chunky Pasta Sauce

Dinner tonight was SO tasty! Spaghetti squash topped with Italian seasoned ground beef and a chunky tomato basil sauce! Easy, delicious and healthy! Here's my recipe for my Basic Chunky Pasta Sauce.  4 cans petite diced tomatoes 1 tsp dried rosemary 1 tsp dried thyme 1 tsp dried fennel seeds 1 tsp dried oregano ½ tsp salt ½ tsp red pepper flakes 1 tsp granulated garlic 1 tsp onion powder 2 tsp dried basil 1/16 tsp stevia powder Add all ingredients to a pot and simmer (without a lid), stirring frequently, until ready to eat! How easy is that?! If the sauce has too much liquid for your preference, continue to cook it down until more of the liquid evaporates. When ready, add to your...

Cookie Monster Biscuit (Paleo Friendly and Sugar-Free!)

I came up with this recipe because I am currently on a Candida diet, which includes multiple food restrictions including no bread products or added sweeteners of any kind, besides stevia. I had to get creative, so I came up with the recipe below, and it has definitely saved me when I am having a craving! If you can have sugar, you can try substituting the stevia for honey or maple syrup. I have not tried this yet, so I’m not sure how much to use. You can always taste the dough and sweeten it to your liking. =) Enjoy!...
