Crockpot Tomatillo Salsa
This weekend we made tomatillo salsa in the crockpot to go with our avocado and ground beef tostadas! We made homemade almond flour tortillas too! Lots and lots of green foods in this meal! Next time we’ll get more color in there! We almost always #eattherainbow, but we got a little carried away with all the greens this time! =) That’s ok though! At least we are still getting some phytonutrients, like chlorophyll, from these delicious green colored foods! =)
Makes about 1.5 quarts
- 20 tomatillos peeled, finely chopped
- 1 jalapeño, finely chopped with seeds
- 1 poblano pepper, finely chopped with seeds
- 1 sweet onion, finely chopped
- 2 garlic cloves, pressed
- 2 tsp dried cilantro (I’m sure fresh would be great too)
- 1.5 tsp sea salt
- 1 tsp lime juice
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp granulated garlic
Put all ingredients into the crockpot and cook on high, about 4 hours or until hot and ready to use. Enjoy! =)
